Scalini Dubai introduces Executive Chef, Francesco Cortorillo. Paying tribute to the classic Italian cuisine Scalini was founded upon, Francesco serves authentic signature recipes and new special dishes that strengthen the restaurant’s beautiful, famiglia ambiance.

Raised in Sicily, Francesco was influenced by the culinary arts from a young age and spent his summers working at his uncle’s restaurant. He moved to Rome, where he developed his craft and gained impeccable skills in a competitive environment. The more time passed, the more he fell in love with cooking, and slowly began to believe in himself and his abilities. With an open, curious mind and non-traditional approach, Francesco stood out against his peers and found his passion. 

During his role as Head Chef at Italian coastal restaurant Piatti by The Beach, Francesco garnered rich and invaluable experience under renowned celebrity Chef Izu Ani & revered Operations Director Luca Chisesi. Pushing his culinary boundaries and perfecting his art, he oversaw all restaurant operations and developed the entire menu concept.

A master of crafting beautiful creations that represent his Italian heritage, Chef Francesco truly understands the importance of fresh produce, focusing on high-quality, simple ingredients, he seamlessly combines his imitable technique and thoughtful approach to enhance natural flavors so that every dish balances perfectly.

Now at the helm of the Scalini kitchen, Francesco aims to maintain consistency and excellence for every guest, flowing seamlessly with the warm, kindhearted team to make every experience exceptional, beautifully elevating every dining experience. Francesco will bring his extensive knowledge of Italian classics to an already tested and winning formula, elevating the whole Culinaire experience. Through the introduction of new special dishes, he aims to infuse a personal flair into traditional recipes. Looking ahead, Francesco plans to increase the global awareness of Scalini as a renowned culinary institution, to support its international expansion.
