QUICK & EASY RECIPES FOR IFTAR AND SUHOOR

Break your fast without stress! These sweet and savoury recipes are designed to be shared with family and friends whilst being quick and convenient to make. With all ingredients available at the M&S Foodhall, these satisfying and delicious recipes are perfect for adding to your iftar menu and sharing with loved ones.

Custard Pudding

A household favourite, this easy and delicious custard pudding recipe takes minimal effort whilst being quick and convenient to make.

SERVES 4
You will need 4 single serving bowls or glasses.

Ingredients
• 100g M&S Rich Tea Finger Biscuits
• 4tsp M&S Raspberry Conserve
• 400g M&S Raspberries
• 400g (1 tin) M&S Silky Smooth Custard
• 1tsp M&S Cocoa Powder Method

  1. Roughly crush the biscuits and place in the bottom of your serving glasses.
  2. Top with a tsp of raspberry jam and a few fresh raspberries, reserving enough to garnish at the end.
  3. Pour the custard over the top of the raspberries and biscuits.
  4. Add a few raspberries on top and finish with a sprinkle of cocoa powder.

Rice Pudding

A comforting combination of creamy rice pudding with sweet pomegranates and pistachios.

SERVES 4
You will need 4 single serving bowls or glasses.

Ingredients
• 30-40g M&S Shelled Pistachios
• 800g (2 tins) M&S Creamy Rice Pudding
• 1 x M&S Madagascan Vanilla Pod
• 2tbsp M&S Pomegranate Seeds
• 1tsp M&S Ground Cinnamon (optional)
• Dried Rose Petals (optional) Method

  1. Finely chop the pistachios.
  2. Gently heat the rice pudding on the stove.
  3. Split the vanilla pod and scrape the seeds into the mixture and stir though.
  4. Add the rice pudding to your serving dishes.
  5. Top with the pistachios in a moon shape.
  6. Sprinkle with pomegranate seeds and add an additional garnish of your choice such as ground cinnamon or dried rose petals.

Bread Pudding

This bread pudding is packed with flavour, made with sweet and buttery croissants, crunchy nuts and finished with vibrant, fresh pomegranate. A great dish for sharing during iftar.

SERVES 4
You will need an oven-proof dish approx. 25cm x 20cm.
Preheat the oven to 200c/180c/Gas Mark 6.

Ingredients
• 4 M&S All Butter Croissants
• 200ml M&S Whole Milk
• 125g M&S Granulated Sugar
• 300ml M&S British Whipping Cream
• 25g M&S Flaked Californian Almonds
• 25g M&S Shelled Pistachios
• 25g M&S Desiccated Coconut
• 1-2tsp M&S Ground Cinnamon
• Sprinkle of M&S Pomegranate to serve Method

  1. Thickly slice the croissants and place in the baking dish.
  2. Heat the milk, sugar and cream in a saucepan and bring to the boil.
  3. Pour the mixture over the croissants. Scatter the almonds, pistachio’s, coconut, and cinnamon on top.
  4. Bake for 25-30 mins until golden brown.
  5. Finish with a sprinkle of pomegranate seeds and serve.

Ouzi Pockets

Delicious savoury pastry pockets, perfect for a healthy and satisfying snack.

SERVES 4
You will need an oven-proof baking sheet.
Preheat the oven to 200c/180c/Gas Mark 6.

Ingredients
• 1tbsp oil
• 200g M&S Lamb Mince
• 1-2tsp Cook With M&S Ras El Hanout
• 50g M&S British Garden Peas
• 30g M&S Pine Nut Kernels
• 50g M&S Basmati Rice
• 500g M&S All Butter Puff Pastry
• 1 egg, beaten
• 250g M&S Authentic Greek Yoghurt
• Half a cucumber, finely chopped Method

  1. In a pan with a tight-fitting lid, heat some oil and brown the minced lamb over high heat.
  2. Season the meat with salt and pepper and add the Ras El Hanout spice blend.
  3. Add the peas and pine nuts, then add the rice and 200 ml of water and bring to a boil.
  4. Reduce to low heat, cover with a lid, and cook for 15-20 mins, or until all the water has been absorbed.
  5. Once cooked, fluff the meat/rice mixture with a fork and allow it to cool completely.
  6. Roll out the pastry sheet and cut into approximately 16 squares.
  7. Place a tablespoon of the mixture into the middle of each square. Lightly brush two of the sides of the square with water, then bring over the opposite two sides to form a triangle. Crimp the edges with a fork.
  8. Brush the top of the pastry triangles with egg and bake in the oven for 15-20 mins.
  9. Mix the yoghurt and cucumber, season well and serve with the Ouzi pockets.
