Bethany Kehdy, Lebanese-American cookbook author and founder of Taste Lebanon, will be launching in Dubai her new food concept, DAYMA, a Levantine cookhouse creating contemporary dishes and delivering them to homes.
Some of her popular dishes include Kalbid’s rice kibbeh, aubergine sfiha stars, prawn sambusek, carrot mutabal, cabbage tabbouleh, chicken musakhan, and sour cherry kebbeh – the dishes bridge past and present by celebrating classics and seasoning them with contemporary touches.
DAYMA celebrates Bethany’s success as a renowned chef, cookbook author and champion of Middle Eastern cuisine. Her culinary tours throughout Lebanon have taken her on a delicious journey, visiting traditional homes in the countryside and curating century-old recipes handed down through generations. These discoveries into the history of Levantine cuisine have led her to revive forgotten recipes from the region, giving rise to the menu of DAYMA.
“I’m very thrilled to be launching DAYMA, my newest endeavor. The menu offers all the familiar classics with fresh, comforting twists. They’re truly dishes you can’t find elsewhere and suitable for office lunches, to family dinners and gatherings. Our shared Levantine kitchen is naturally quite vegetarian-led and so there are plenty of delicious offerings in that category too!” says Kehdy.
